"One could hardly defend oneself against it": thus spoke La Quintinye, gardener to Louis XIV, when faced with this spectacular pear that troubled him so much.

Large, elegantly pyramidal, adorned with a vermilion red speckled with black dots, the Bon-Chrétien d'Espagne captivated with its beauty but divided connoisseurs. Merlet proclaimed it delicate, while La Quintinye relegated it to the 266th rank in his fruit garden, faulting its flesh for being "rough, coarse, and stony."

Eighty years later, Duhamel tempered the judgment: cultivated in good soil, with good exposure, it could prove sweet and succulent. This controversy gives full historical flavor to this fruit: a symbol of the demands of the royal table and the passionate debates among pomologists.

A large, elongated pear in a perfect pyramid shape, the Bon-Chrétien d'Espagne is distinguished by its vibrant red on one side and yellowish-white on the other.

Its white flesh, dotted with greenish specks, is crisp; a characteristic that La Quintinye detested intensely. Depending on the terroir and the year, it could be dry and hard, or conversely, tender and full of sweet, juicy water.

Harvested from mid-November to mid-December, sometimes until January, it required light, dry soil and good sunlight to reach its perfect ripeness.

Excellent in compote, it could also be eaten raw when "well-conditioned." Its name comes from its striking resemblance to the famous Bon-Chrétien d'hiver, and while La Quintinye reluctantly admitted that "it makes a good show in the ornamentation of pyramids," Duhamel valued it more, recognizing that it was among the most beautiful pears of his time.

This plate is taken from Pierre-Antoine Poiteau and Pierre Jean François Turpin's Traité des Arbres Fruitiers, a botanical encyclopedia published between 1807 and 1835, and a major reference in 19th-century naturalistic illustration.

It combines the rigor of scientific drawing with a rare artistic sensibility, characteristic of the great plates of the golden age of illustrated botany.
